Seaboy Restaurant and Bar is a vibrant addition to the Cornelius, NC dining scene, officially opening its doors on March 26, 2025, at 20822 N Main Street. The restaurant is the brainchild of Chef Jonathan Cox. Seaboy is a community-centric restaurant that emphasizes simplicity, honesty, and sustainability.
Dining Experience and Menu
The Seaboy Restaurant & Bar has a warm, welcoming environment with only 10 intimate tables which are complemented by patio seating and a chef’s counter. The carefully curated menu consist of natural flavors of quality ingredients.
Some standout offerings include:
- Daily Oysters: Served with crackers, Fresno hot sauce, cocktail sauce, and mignonette.
- Roasted Oysters Seaboy: Topped with lump crab, NC shrimp, shiitake mushrooms, parmesan, and breadcrumbs.
- NC Black Grouper: Accompanied by hominy maque choux and tomato jam.
- Scallops: Paired with parsnip & sunchoke hash, apple butter, mustard seeds, and chermoula.
- Seafood Paella: A hearty dish featuring half lobster, squid, shrimp, sofrito, and saffron.
- Filet “Oscar”: Served with potato pavé, garlicky mustard greens, jumbo lump crab, and béarnaise sauce .
The restaurant also offers a unique “Dinner with Jonny” experience—a four-course tasting at the chef’s counter, showcasing daily rotating offerings.

Seaboy prides itself on delivering exceptional customer service in a relaxed, intimate setting. The limited seating ensures personalized attention, making each visit special. The ambiance is casual yet refined, with a dress code that encourages guests to dress smartly. The restaurant operates Tuesday through Sunday, with varying evening hours, and is closed on Mondays .
